Salad Olivier is a main dish of New Year's table in Russia. The name was in honor of its creator, Chef Lucien Olivier, who held Parisian restaurant in Moscow in the early 60s of the XIX century. The salad is also known as Russian salad, Potato Salad.
Ingredients: 300g cooked chicken or meat or sausage, 1 boiled carrot, 3 small pickles, 100 g of green peas, 1 boiled potato, 3 hard-boiled eggs, salt, 2 tablespoons of mayonnaise.
Preparation: cut the chicken or meat or sausage, vegetables, diced pickles and eggs in the same size. Add salt to taste, add the mayonnaise and mix well.
