Uha is the Russian national dish, a kind of soup. The main ingredient is a fish. Depending on the type of fish uha may be white (pike, perch, ruff), red (sturgeon, salmon) and black (chub, carp, rudd). Uha, which is prepared on a fishing trip, differs from the recipe which is cooked at home. “Fishing uha” cooked over a campfire, with lots of fish, often without vegetables.
Ingredients: fish (preferably with a tail or head), 1/2 onion, 1/2 carrot, 3 potatoes, bay leaf, black pepper, celery, salt.
Preparation: clean fish from the scales and giblets, rinse well. Chop the onion into thin strips, chop the carrot and potatoes into cubes, chop the celery. Boil a pot of water, put vegetables in it and cook for 15 minutes, then put the fish and cook for 10 minutes. Season with salt and pepper, add bay leaf. Cook for another 5 minutes.
