Rassolnik is a dish of Russian cuisine. This is a kind of soup, the main ingredient is pickled cucumber. Rassolnik is known in Russia since the XV century.
Ingredients: 1 chicken leg, a pickle, 1/4 cup of pearl barley, 1/2 onion, 1/2 carrot, fresh herbs, bay leaf, salt, pepper and sunflower oil.
Preparation: boil the chicken. Add washed pearl barley to the chicken broth and cook on low heat about an hour. Then chop the onion and grate the carrot, fry them in a small amount of oil. Add sauteed onions and carrots to the broth, then add the sliced pickle, herbs, bay leaf, salt and pepper and cook for another 10 minutes.
