Pelmeni (also written as pelmeny) are the meat dumplings, it is everyday dish in Russia. Nowadays people often buy frozen pelmeni in the stores. People usually make pelmeni by hands just for holidays.
Dough: 2 cups of flour, 1 egg, 2 tablespoons of water, 1/2 tablespoons of salt.
Filling: 300g minced pork, salt and pepper.
Preparation: put the sifted flour in a bowl, make a recess in the middle, add an egg, pour warm water, add salt and knead the smooth dough.
To make pelmeni you can use a special form or make them by hands. There are several ways of rolling out dough. First, you can roll out the dough sausage, cut it crosswise into pieces, then roll each piece into a thin round layer. The second way, roll out a large round layer of the dough, and then squeeze out rounds by a glass cup. Reassemble the remaining dough into a ball and roll it out again.
Mold pelmeni as follows: put a spoon of stuffing on a dough round, fold in half and close up the edge so as to obtain a form of a crescent. Then seal the tips of the crescent together.
Cook the pelmeni in the boiling salted water. When the pelmeni come up to the water surface, cook for another 15 minutes.
