Golubtsy (also written as golubcy, golubci, golubtsi, stuffed cabbage, cabbage roll) is a dish of Middle Eastern and European cuisine, containing meat with boiled rice wrapped in cabbage leaves. The dish is common in Russia.
Ingredients: 400g minced beef or pork, a cabbage, 1/2 cup of cooked rice, 1 onion, 2 cups of beef broth or water, 1 tablespoon of tomato paste, 1 tablespoon of flour, herbs, oil, salt and black pepper.
Preparation: add cooked rice and finely chopped onion in minced meat, also add salt and pepper, mix them well. Dip cabbage leaves in boiling water, so they get softened, then put 2 tablespoons of minced meat in it and wrap like envelope. Pour a little oil into a deep frying pan and fry the onion in it, add the tomato paste, flour and mix it, then pour broth in it. Add pepper and salt to taste. When the broth will get boiled put the cabbage, simmer until fully cooked with the lid closed, about 25-35 minutes. Golubtsy can be served with sour cream and sprinkled with greens.
