Blini

There are a lot of recipes for blini (pancakes), as well as for hvorost. Blini (also written as bliny) is the main attribute of Maslenitsa (Shrovetide, the Pancake festival or Pancake week). Maslenitsa is celebrated one week before Lent, seven weeks before Easter.

We will prepare the classic Russian blini.

Ingredients: 1 egg, 1/2 liters of milk, 2 tablespoons of sugar, 1/2 tablespoons of salt, 300 g of flour, 1 tablespoons of dry yeast, 1 tablespoon of sunflower oil.

Preparation: put sifted flour in a dip bowl. Add sugar, salt, yeast and a little milk. Mix the dough well breaking the lumps. The lumps are broken easier in the dense dought then in the liquid one. Add remaining milk and mix the dough again. Add the egg and sunflower oil. Mix the dough. Put the dough in a warm place, cover it with a towel and let it swell for 30 minutes. The dough should be neither too dense nor too liquid. If the dough is too dense, the blini will be too thick. If the dough is too liquid, the blini will stick to the pan.

Grease a flat pan with low sides with a little oil. Warm it up. Pour half of the ladle and quickly let the blini spread on the pan. Fry the blini on both sides.

Blini is served with butter, sour cream, condensed milk, honey or jam. Blini can be stuffed with meat, eggs, cheese, cottage cheese, apples, cabbage, mushrooms, etc. When you cook stuffed blini, put the stuffing into blini firstly, wrap it and fry with oil in a frying pan.
